Ingredients

  • 200 g of tenderstem broccoli, cut into 2 inch strips
  • 1 tin of borlotti beans, (around 400g) drained
  • 0.5 red onion, sliced
  • 4 ripe tomatoes, roughly chopped
  • 1 bunch of parsley, shredded
  • 4 tbsp of extra virgin olive oil
  • 1 tbsp of red wine vinegar
  • 1 sprinkle of salt, to season
  • 1 sprinkle of black pepper, to season

Method

  • Step 1

    Bring a medium pan of salted water to the boil, add the Tenderstem and cook for 1 minute. Drain, cool under cold running water and set aside.
  • Step 2

    Mix together in a large bowl all remaining ingredients including the Tenderstem, season with salt and pepper and serve.
