
Thai Basil, Chilli and Red Grapefruit Crab Boats

Ingredients
- red grapefruit, broken into segments and peeled
- 400g white crab meat
- 1 red chilli, deseeded and finely chopped
- 1 (25g) bunch thai basil, leaves picked and finely chopped
- 1 lime, zested, plus a squeeze of juice and extra wedges, to serve
- 3 (approx.) little gem lettuces
Method
Step 1
Chop the grapefruit segments into small pieces and place in a sieve set over a bowl to drain.Step 2
In a bowl, mix the crab meat with the chilli, thai basil and grapefruit, plus the lime zest and a squeeze of juice. Season to taste. Chill until ready to assemble.Step 3
Arrange 16-18 nice little gem lettuce leaves on a platter. Spoon the crab mix into the lettuce cups; serve with extra lime wedges for squeezing over.Step 4
Recipe Tip: You can assemble this up to 30 mins before serving (just make sure your grapefruit isn’t too wet before adding). Cover and chill.
