Ingredients

  • 2 tablespoons of fresh coriander, chopped
  • 1 tbsp of olive oil
  • 1 large garlic clove, crushed
  • 400 g of raw shelled prawns, thawed if frozen
  • 4 tablespoons of tomato ketchup
  • 1 drizzle of tabasco sauce, to taste
  • 1 large onion, diced
  • 1 large red pepper, diced
  • 2.5 cm of piece root ginger, grated
  • 1 squeeze of lemon juice

Method

  • Step 1

    Heat the oil in a frying pan. Add in the onion and fry until softened. Add red pepper and fry, stirring for 2–3 minutes.
  • Step 2

    Add in garlic and ginger and fry for a further 2–3 minutes.
  • Step 3

    Add the prawns and fry, stirring, until they have just turned pink.
  • Step 4

    Add tomato ketchup and tabasco sauce to taste.
  • Step 5

    Add coriander and a squeeze of lemon juice.
  • Step 6

    Cook for 2–3 minutes, until the prawns are cooked and the sauce is sticky.
  • Step 7

    Serve with either toasted pitta bread or rice.
