
Thai Cheating Sticky Chilli Prawns

Ingredients
- 2 tablespoons of fresh coriander, chopped
- 1 tbsp of olive oil
- 1 large garlic clove, crushed
- 400 g of raw shelled prawns, thawed if frozen
- 4 tablespoons of tomato ketchup
- 1 drizzle of tabasco sauce, to taste
- 1 large onion, diced
- 1 large red pepper, diced
- 2.5 cm of piece root ginger, grated
- 1 squeeze of lemon juice
Method
Step 1
Heat the oil in a frying pan. Add in the onion and fry until softened. Add red pepper and fry, stirring for 2–3 minutes.Step 2
Add in garlic and ginger and fry for a further 2–3 minutes.Step 3
Add the prawns and fry, stirring, until they have just turned pink.Step 4
Add tomato ketchup and tabasco sauce to taste.Step 5
Add coriander and a squeeze of lemon juice.Step 6
Cook for 2–3 minutes, until the prawns are cooked and the sauce is sticky.Step 7
Serve with either toasted pitta bread or rice.
