These little lettuce cups are perfect for canapes or work brilliantly as a starter at a dinner party.

Ingredients

  • 2 tbsp of blue dragon light soy sauce
  • 500 g of minced pork
  • 6 cloves of garlic, peeled and finely chopped
  • 1 piece of ginger, 5 inches long, peeled and finely chopped
  • 2 red chillies, deseeded and finely chopped
  • 1 large handful of coriander, finely chopped
  • 1 large handful of mint leaves, roughly chopped
  • 2 tbsp of blue dragon fish sauce
  • 2 tbsp of blue dragon sweet chilli sauce
  • 0.5 lime, juiced
  • 1 handful of peanuts, chopped
  • 2 tbsp of vegetable oil, for frying
  • 6 leaves of little gem lettuce

Method

  • Step 1

    Gently peel the leaves from each of your little gem lettuce heads, trying to keep them whole, wash them and set aside.
  • Step 2

    Add your oil, garlic, chilli and ginger to a large wok or frying pan over a medium heat and lightly fry for one minute. Then turn the heat up to a high temperature, add the pork mince and stir well, keeping the constantly moving and mixing it well with the other ingredients.
  • Step 3

    Once the mince has cooked, add your fish sauce, soy and sweet chilli sauce and mix well. Add the juice of your lime, stir through and remove from the heat.
  • Step 4

    Combine with the chopped coriander and mint. Then, using a dessert spoon, scoop a little of the mixture into each lettuce cup and garnish with the chopped peanuts.
