- 2 tbsp of blue dragon light soy sauce
- 500 g of minced pork
- 6 cloves of garlic, peeled and finely chopped

- 1 large handful of coriander, finely chopped
- 1 large handful of mint leaves, roughly chopped
- 2 tbsp of blue dragon fish sauce
- 2 tbsp of blue dragon sweet chilli sauce
- 0.5 lime, juiced
- 1 handful of peanuts, chopped
- 2 tbsp of vegetable oil, for frying
- 6 leaves of little gem lettuce
Method
Step 1
Gently peel the leaves from each of your little gem lettuce heads, trying to keep them whole, wash them and set aside.Step 2
Add your oil, garlic, chilli and ginger to a large wok or frying pan over a medium heat and lightly fry for one minute. Then turn the heat up to a high temperature, add the pork mince and stir well, keeping the constantly moving and mixing it well with the other ingredients.Step 3
Once the mince has cooked, add your fish sauce, soy and sweet chilli sauce and mix well. Add the juice of your lime, stir through and remove from the heat.Step 4
Combine with the chopped coriander and mint. Then, using a dessert spoon, scoop a little of the mixture into each lettuce cup and garnish with the chopped peanuts.
