
Thai Sausage Lettuce Cups

Ingredients
- 2 tsp of ginger paste
- 2 tsp of garlic paste
- 200 g of rice noodles
- 1 tbsp of sunflower oil
- 1 lime
- 8 pork sausages, skins removed
- 4 spring onions, trimmed and sliced diagonally
- 1 tbsp of soy sauce
- 1 tbsp of fish sauce
- 3 little gem lettuce, leaves separated, to serve
- 50 g of cashew nuts, chopped, to serve
- 2 tbsp of fresh coriander, chopped, to serve
- 1 red chilli, sliced, to serve (optional)
Method
Step 1
Place the garlic and ginger paste, soy sauce and fish sauce in a large bowl and mix.Step 2
Add the sausage meat to the bowl and mix to combine all the ingredients.Step 3
Heat the sunflower oil in a wok or a sauté pan and add almost all of the spring onions (leave some aside for garnish). Cook for 2-3 minutes and then add the seasoned sausage meat. Cook for 8-10 minutes or starting to go golden brown.Step 4
Add the noodles and cook for a further 2 minutes.Step 5
To serve: Place the lettuce leaves on a large platter and top each one with sausage mix.Step 6
Garnish with the chopped cashews, coriander, remaining spring onions and if using, the fresh red chilli. Cut a lime into segments to serve on the side.
