
Thai-style Minced Pork with Noodles

For your next delicious dinner, look no further than this pork mince stir fry with noodles. Super easy to make without compromising on taste, simply cook your pork, stirring in the sauce and noodles – or, if you’d prefer, rice.
To bulk out the Thai pork mince add some fresh vegetables into the mix too – think carrots, broccoli and pak choi.Time and servings

Ingredients
- 1 tbsp of vegetable oil
- 675 g of pork mince
- 4 cloves of garlic cloves, grated or finely chopped
- 2 fresh hot red chillies, deseeded and finely chopped
- 1 lime, juiced
- 1 splash of thai fish sauce
- 1 splash of dark soy sauce
- 1 handful of fresh coriander, finely chopped
- 4 servings medium rice noodles or rice
Method
Step 1
Heat the oil in a wok or large frying pan over a medium-high heat. Add the pork, garlic, and a pinch of salt. Stir-fry until no longer pink, tossing continuously.Step 2
Add the chillies, lime juice, fish sauce, and soy sauce, and stir-fry for a further 5 minutes.Step 3
When ready to serve, sprinkle over the coriander, and stir well. Serve hot with noodles or rice.
