
Thai Tomato Salad

We love a recipe hack, and this Thai Tomato Salad has a seriously delicious one. We’ve used a Thai green curry herb kit and turned it into a punchy dressing that couldn’t be easier to make, perfect tossed with fresh tomatoes. Serve this salad as a starter, or with sticky rice and BBQ’d meat or fish for an impressive main course.

Ingredients
- 1 x M&S Thai Herb Kit
- 3 tbsp fish sauce
- 1-2 tbsp palm sugar
- 5 tbsp lime juice
- 1 banana shallot, thinly sliced or chopped
- 2 x 280g packs Isle of Wight Tomatoes x M&S Summer Selection Tomatoes, cut to wedges or halved if small
- 4 tbsp salted roasted peanuts, roughly chopped
- 2 tbsp crispy onions, optional
Method
Step 1
Separate all the ingredients in the Thai Herb Kit then finely chop the lime leaf, red chilli and lemongrass then add to a large mixing bowl. Grate in the garlic (use 1 or 2, depending on your taste) and ginger then mix in the fish sauce, sugar, lime juice and shallot. Taste and adjust the seasoning to your liking. Set aside for 5 mins to allow the flavours to develop and ingredients soften slightly.Step 2
When you’re ready to serve, tip in the tomatoes and herbs and toss to coat well.Step 3
Spoon onto a serving plate and sprinkle with peanuts and crispy onions, if using. Serve with BBQ’d meats and sticky rice, if you like.
