Ingredients
- 1 tbsp of olive oil, for cooking
- 4 tbsp of m&s ketchup
- 4 m&s free-range chicken breasts
- 4 brioche burger buns
- 2 little gem lettuces, leaves peeled
- 3 spring onions, finely sliced
Method
Step 1
Slice the chicken breasts horizontally through the middle to create evenly sized escalopes. Then season with salt and pepper, and drizzle over a little olive oil.Step 2
In a griddle or frying pan, cook the chicken pieces for 4 minutes on each side, then remove from the pan and allow to rest.Step 3
Halve the burger buns and toast them in the same pan to soak up any extra chicken flavour.Step 4
Spoon the ketchup onto the base of each bun, then add lettuce and a chicken breast. Top with spring onion and a little more ketchup, and sandwich the other half of the bun on top.
