Deliciously succulent, 100% free-range British chicken is the perfect match in these super-juicy burgers. Try serving them with sweet potato wedges or a crunchy slaw.

Ingredients

  • 1 tbsp of olive oil, for cooking
  • 4 tbsp of m&s ketchup
  • 4 m&s free-range chicken breasts
  • 4 brioche burger buns
  • 2 little gem lettuces, leaves peeled
  • 3 spring onions, finely sliced

Method

  • Step 1

    Slice the chicken breasts horizontally through the middle to create evenly sized escalopes. Then season with salt and pepper, and drizzle over a little olive oil.
  • Step 2

    In a griddle or frying pan, cook the chicken pieces for 4 minutes on each side, then remove from the pan and allow to rest.
  • Step 3

    Halve the burger buns and toast them in the same pan to soak up any extra chicken flavour.
  • Step 4

    Spoon the ketchup onto the base of each bun, then add lettuce and a chicken breast. Top with spring onion and a little more ketchup, and sandwich the other half of the bun on top.
