A refreshing Italian aperitif with an iconic orange hue, this is summer in a glass. Jumbo ice-cube moulds are ideal here, but normal-sized ice cubes will work too, or use a large freezer-safe container. Time and servings

Ingredients
- 550 ml of aperol italian aperitif
- 350 ml of prosecco (we used faldeo prosecco)
- 100 ml of soda water
- 1 large orange, sliced into 5mm rounds or semicircles
Method
Step 1
Using 500ml of the Aperol, fill ice-cube moulds (or a freezer-safe container) halfway, then top up with water. Stir gently to combine. Place in the freezer for 4-6 hrs, or until frozen.Step 2
Pop some of the Aperol ice cubes into serving glasses, then add the rest to a 1L serving jug/bowl along with the orange slices. (If you’ve used a freezer-safe container for the Aperol, use a serrated knife to carefully cut the frozen block into large cubes.)Step 3
Add the remaining 50ml of Aperol to the jug/bowl along with the prosecco and soda water. Stir to combine, then serve. As the Aperol ice melts, more of its flavour will seep into the drink while also adding a good amount of dilution and keeping it chilled.
