
Three Cheese Toastie

Ingredients
- 20 g of comte cheese, grated
- 1 clove of garlic, grated
- 20 g of smooth mild cheese (i.e. brie or camembert), grated
- 4 slices of sourdough bread
- 160 g of mature cheddar, grated
- 2 spring onions, finely chopped
Method
Step 1
Mix the spring onions and garlic together in a small bowl. In another bowl, mix the three kinds of cheese together.Step 2
Put two slices of sourdough bread in a medium-hot, lightly greased, non-stick griddle or frying pan (unless you have a panini toaster). Sprinkle half the cheese on one slice followed by half the spring onion mixture, and repeat for the other slice. Place a fresh slice of bread on top of each and weigh the sandwiches down with another frying pan and a couple of tin cans to apply some weight.Step 3
Cook for around 3 mins until the crust starts to brown and the cheese starts to ooze out of the bread.Step 4
Flip a few times to cook evenly on both sides, but be careful not to overdo it – if it’s too brown the flavours won’t shine through.
