Ingredients

  • 2 tbsp of olive oil
  • 250 g of (9oz) halloumi cheese, cut into thick slices
  • 1 lemon, zest and juice
  • 2 tbsp of chopped fresh thyme

Method

  • Step 1

    Place the Halloumi cheese in a shallow, non-metallic bowl and add the remaining ingredients.
  • Step 2

    Season with a little freshly ground black pepper and allow to marinate for between 30 minutes to 1 hour.
  • Step 3

    Cook on the barbecue for 5 minutes until lightly charred, then serve hot with our herbed couscous salad.
