
Thyme Griddled Halloumi

Ingredients
- 2 tbsp of olive oil
- 250 g of (9oz) halloumi cheese, cut into thick slices
- 1 lemon, zest and juice
- 2 tbsp of chopped fresh thyme
Method
Step 1
Place the Halloumi cheese in a shallow, non-metallic bowl and add the remaining ingredients.Step 2
Season with a little freshly ground black pepper and allow to marinate for between 30 minutes to 1 hour.Step 3
Cook on the barbecue for 5 minutes until lightly charred, then serve hot with our herbed couscous salad.
