Ingredients
- 2 tsp smoked sea salt flakes, lightly crushed
- 2 limes, finely zested to give 1 tsp zest, squeezed to give 30ml juice, plus 1 wedge to wet the glass rims
- 100ml rhubarb gin
- 30ml ginger syrup, from a jar of stem ginger
- 2 (approx.) drops vanilla extract
- 100ml (approx.) pink fizz
Method
Step 1
Scatter the salt and 1 tsp lime zest onto a saucer. Run a wedge of lime around the rim of 2 whisky tumblers, then dip into the salt mixture to coat evenly.Step 2
In a cocktail shaker or clean lidded jar, combine the gin, lime juice, ginger syrup and vanilla extract. Add ice and shake for 8 secs to chill.Step 3
Strain into the prepared tumblers and top up with a splash of pink fizz. Serve immediately.
