Tikka Lamb Chops with Broccoli Salad

A simple jar of curry paste is your friend in this flavoursome Tikka Lamb Chops with Broccoli Salad from OcadoLife recipe editor Lauren Hoffman. “The paste does double duty as a marinade for the lamb and to bring gentle spice to the dressing.” Ideal for a midweek supper, it takes just over 15 mins to make and is super-easy to scale up as required.

Ingredients

  • 2.5 tbsp tikka paste
  • 1 heaped tbsp natural yoghurt
  • 4 lamb loin chops
  • 325g broccoli crown, cut into bite-sized pieces
  • 15g mint leaves
  • 25g shelled pistachios
  • 2.5 tbsp extra-virgin olive oil
  • 1 lime, juiced
  • 30g pitted dates, chopped
  • 1 red chilli, chopped
  • 2 mini naans, to serve (optional)

Method

  • Step 1

    In a large dish, mix 2 tbsp of the tikka paste with the yoghurt; season. Add the lamb chops and turn to coat.
  • Step 2

    Blanch the broccoli in boiling water for 90 secs, then drain. Plunge into ice water; drain.
  • Step 3

    For the dressing, blitz the mint, pistachios, extra-virgin olive oil, remaining ½ tbsp of the tikka paste, most of the lime juice and a pinch of salt. Adjust with more lime or salt, to taste. Toss the dates and chilli with the broccoli and dressing.
  • Step 4

    Fry the chops in the olive oil for 3-4 mins each side. Serve with the broccoli and naans, if liked.
