
Tikka Lamb Chops with Broccoli Salad

Ingredients
- 2.5 tbsp tikka paste
- 1 heaped tbsp natural yoghurt
- 4 lamb loin chops
- 325g broccoli crown, cut into bite-sized pieces
- 15g mint leaves
- 25g shelled pistachios
- 2.5 tbsp extra-virgin olive oil
- 1 lime, juiced
- 30g pitted dates, chopped
- 1 red chilli, chopped
- 2 mini naans, to serve (optional)
Method
Step 1
In a large dish, mix 2 tbsp of the tikka paste with the yoghurt; season. Add the lamb chops and turn to coat.Step 2
Blanch the broccoli in boiling water for 90 secs, then drain. Plunge into ice water; drain.Step 3
For the dressing, blitz the mint, pistachios, extra-virgin olive oil, remaining ½ tbsp of the tikka paste, most of the lime juice and a pinch of salt. Adjust with more lime or salt, to taste. Toss the dates and chilli with the broccoli and dressing.Step 4
Fry the chops in the olive oil for 3-4 mins each side. Serve with the broccoli and naans, if liked.
