Meaning ‘summer red’, Tinto de Verano is a fruity tipple similar to its more famous cousin sangria. Bursting with cheerful Spanish city-break vibes, this mix of gin, red wine, sugar syrup and soda water from Ottolenghi group bar manager Oren Coleman is super refreshing and looks irresistible in a pretty pitcher or jug loaded with ice cubes and slices of fresh strawberries, orange and lemon.Time and servings

Ingredients
- 400 g of strawberries, sliced
- 3 lemons, 2 juiced and 1 cut into wedges
- 40 g of caster sugar
- 150 ml of gin
- 250 ml of red wine
- 250 ml of soda water, chilled
- 1 large orange, halved and sliced
Method
Step 1
Add half the strawberry and orange slices and the lemon juice to a 1.5L jug.Step 2
Dissolve the sugar in 40ml hot water, allow to cool. Add to the jug, with the gin, red wine and soda. Fill the jug to the brim with ice, then stir.Step 3
Fill 6-8 tumblers with ice, divide the remaining fruit between them, then top up with the tinto de verano.
