
Toasted Brioche with Mascarpone and Berry Ice Cream

Early summer sees us Brits emerge blinking into the sunlight, clutching the barbecue tongs. This recipe is great for enjoying outdoors when the sun shines, yet easy enough to cook indoors if the weather turns.Time and servings

Ingredients
- 300 g of mixed berries
- 4 slices of brioche
- 75 g of icing sugar
- 500 g of mascarpone
Method
Step 1
For the ice cream: beat the mascarpone until the texture is loose and silky. Pureé two thirds of the berries and fold in. Freeze for 2 - 4 hours until just set all the way through.Step 2
Grill or toast the brioche carefully - it will catch and burn easily. Top with a scoop of the ice cream and the remaining berries, chopped.
