
Toasted Pecan Granola

A balanced breakfast classic that'll keep you going. Crunchy pecan nuts, seeds and oats are toasted together and tossed with maple syrup for a comforting, rich flavour. Store any leftover granola in an airtight container and use within 2 weeks.Time and servings

Ingredients
- 60 g of jumbo oats
- 40 g of mixed seeds
- 75 g of pecans
- 1 tbsp of maple syrup, plus extra to drizzle
- 1 heaped tsp of coconut oil
- 300 g of natural yoghurt, to serve
- 2 tsp of raisins, to serve
- 1 apple, thinly sliced, to serve
Method
Step 1
In a large frying pan, toast the oats over a medium heat for 3-4 mins. Shake occasionally, making sure they don’t burn. Remove and set aside in a bowl.Step 2
Now toast the seeds for about 2 mins, shaking until they start to pop and colour. Add to the bowl with the oats.Step 3
Tip the pecans into the pan and cook for 4 mins until they start to smell toasty.Step 4
Add the oats and seeds back in along with the coconut oil and maple syrup. Cook for 2 mins until crisp, then set aside a minute or so to cool.Step 5
Layer in a jar or bowl with your choice of yoghurt and top with raisins and apple, and an extra drizzle of maple syrup.
