Ingredients

  • 80g sourdough baguette, torn into bite sized pieces
  • 4 tbsp extra-virgin olive oil
  • 1 rosemary sprig, leaves picked and finely chopped
  • 1 tbsp balsamic vinegar
  • 1 tsp dijon mustard
  • 100g King Cherries, pitted and halved
  • 100g Italian Style Peppery Baby Leaf Salad
  • 60g parma ham, cut into bite sized pieces
  • 80g Mini Cheese Roulade with Garlic & Herbs, thickly sliced

Method

  • Step 1

    Heat the oven to 200°C/ 180°C fan/ gas 6. Spread the sourdough over a baking tray lined with baking paper. Drizzle with 1 tbsp olive oil, sprinkle with chopped rosemary and a good pinch of salt and freshly ground black pepper. Toss to coat then cook for 10-12 mins until golden and toasted. Set aside to cool.
  • Step 2

    Meanwhile, mix the balsamic vinegar, mustard and 3 tbsp oil in a mixing bowl and whisk until emulsified. Add the cherries, mix to coat then leave to marinade for a few mins.
  • Step 3

    Divide the salad leaves into serving bowls and top with ham. Tear over the sliced cheese and top with cooled croutons then spoon over the cherries and dressing to serve.
