
Tom Kerridge's Cherry and Parma Ham Salad with Toasted Sourdough Croutons

Ingredients
- 80g sourdough baguette, torn into bite sized pieces
- 4 tbsp extra-virgin olive oil
- 1 rosemary sprig, leaves picked and finely chopped
- 1 tbsp balsamic vinegar
- 1 tsp dijon mustard
- 100g King Cherries, pitted and halved
- 100g Italian Style Peppery Baby Leaf Salad
- 60g parma ham, cut into bite sized pieces
- 80g Mini Cheese Roulade with Garlic & Herbs, thickly sliced
Method
Step 1
Heat the oven to 200°C/ 180°C fan/ gas 6. Spread the sourdough over a baking tray lined with baking paper. Drizzle with 1 tbsp olive oil, sprinkle with chopped rosemary and a good pinch of salt and freshly ground black pepper. Toss to coat then cook for 10-12 mins until golden and toasted. Set aside to cool.Step 2
Meanwhile, mix the balsamic vinegar, mustard and 3 tbsp oil in a mixing bowl and whisk until emulsified. Add the cherries, mix to coat then leave to marinade for a few mins.Step 3
Divide the salad leaves into serving bowls and top with ham. Tear over the sliced cheese and top with cooled croutons then spoon over the cherries and dressing to serve.
