
Tom Kerridge's Creamy Honey, Orange and Pistachio Possets

Showstopping yet simple, these creamy honey, orange and pistachio possets from chef Tom Kerridge make the perfect party pud. Ingredients
- 600ml double cream
- 2 tsp vanilla extract
- 80ml M&S Collection Select Farms British Honey
- 200ml fresh orange juice (from approx. 3 oranges), plus 2 oranges, 1 peeled and thickly sliced, 1 zested
- 2 tbsp pistachios, finely chopped
- 8 all-butter shortbread rounds
Method
Step 1
Pour the cream, vanilla extract and honey into a medium saucepan and set over a medium heat. Stir until the honey has dissolved then gently bring to a simmer for 1-2 mins, until hot through but not boiling.Step 2
Remove the pan from the heat and stir in the orange juice and zest. Leave the mixture to cool, then transfer to a jug. Divide the cooled mixture between 4 champagne glasses, cover and chill for 3 hours, or until the possets have set.Step 3
When ready to serve, take the possets out of the fridge. Uncover and decorate each with an orange slice and a scattering of chopped pistachios. Place the glasses onto serving plates and add a couple of shortbread rounds to each plate for dipping.
