Ingredients

  • 4 British heritage pork belly strips, cut in half lengthways
  • 100ml hoisin sauce
  • 50ml runny honey
  • ½ tsp Chinese 5 spice
  • 3 salad onions, green parts only and sliced to matchsticks
  • 1 red chilli, halved, deseeded and finely sliced
  • 2 Granny Smith apples, peeled and cut to matchsticks
  • 2 tbsp apple cider vinegar
  • 1 handful coriander, leaves picked
  • 1 pack M&S bao buns

Method

  • Step 1

Put the pork belly strips in a bowl with the hoisin, honey and Chinese 5 spice. Mix well to fully coat the cover and marinate in the fridge for at least 20 mins.
  • Step 2

Heat the oven to 180°C/ 160°C fan/ gas 4 with the grill setting also on. Line a baking tray with foil and top with pork belly strips, set on a high shelf and grill for 8 mins, until cooked through and bubbling.
  • Step 3

Tip the salad onions and chilli into a bowl of iced water then set aside for 5 mins to allow the onion to curl up. Drain and pat dry.
  • Step 4

Tip the onion and chilli in to a bowl and toss with the apple, vinegar and coriander.
  • Step 5

Heat the buns to pack instructions then fill each with a piece of pork and top with slaw to serve.
