Ingredients
- 300g new potatoes, quartered
- 2 tbsp light olive oil
- 2 British heritage thick-cut pork chops, rind scored in 1cm intervals
- 1.5 tsp sweet paprika
- 1.5 tsp smoked paprika
- 1 small red pepper, deseeded and finely sliced
- 2 banana shallots, finely chopped
- 2 garlic cloves, finely chopped
- 1 tbsp tomato purée
- 100ml chicken stock
- 100ml single cream
- 200g broccoli
Method
Step 1
Heat the oven to 200°C / 180°C fan/ gas 6. Spread the potatoes over a lined baking sheet and drizzle with ½ tbsp oil and season well. Roast for 20 mins, until golden and crisp.Step 2
Drizzle the pork with ½ tbsp oil and ½ tsp each sweet and smoked paprika then season well. Heat a large non-stick frying pan over a medium- high heat and once hot, add the chops rind-side down to crisp up, about 2-3 mins. Move the chop around the pan so the ring crisps evenly.Step 3
Tip the chops onto the flat sides and cook for 1-2 mins on each side, or until golden brown. Transfer to a baking tray and set in the oven for 5 mins, until just cooked through.Step 4
Return the frying pan to the heat to make the paprika sauce. Heat the remaining 1 tbsp oil then add the peppers and cook for 2 mins, then the shallots and garlic for 2-3 mins more. Sprinkle over the remaining 1 tsp sweet paprika and 1 tsp smoked paprika then stir in the tomato puree and cook for 1 min.Step 5
Pour over the stock, stir well and bubble until the stock has reduced by half. Add the cream and cook until the sauce thickens. Remove from the heat and set aside.Step 6
Heat a splash of oil in a clean frying pan and fry the broccoli until just tender.Step 7
To serve, divide the potatoes and broccoli between 2 plates then top with the pork chops and spoon over the sauce.
