
Tom Kerridge's Smoky Cheeseburger with Rainbow Slaw

This classic cheeseburger recipe from Tom Kerridge for M&S lets great British beef do the talking. Made with 100% traceable British beef mince, they are packed with flavour thanks to sweet onions and smoky mature cheddar. Topped with a punchy rainbow slaw to cut through the richness, while fiery pickles and burger sauce bring it all together. It’s a classic cheeseburger, done properly.

Ingredients
- 1 brown onion, finely diced
- 1 x 500g pack M&S 12% Fat British Beef Mince
- 1 x 200g pack M&S crunchy rainbow slaw
- 10g flatleaf parsley, finely chopped
- 2 tbsp M&S Campfire Mayo
- 2 tsp M&S Posh Dog Mustard
- 1 tbsp white wine vinegar
- 4 slices M&S Smoky Mature Cheddar
- 4 M&S Collection Brioche Burger Buns, halved and toasted
- 2 tbsp M&S House Burger Pickle
- 4 tbsp M&S Fiery Pickles
- Chips or French Fries, to serve, optional
Method
Step 1
Heat a medium non-stick frying pan over a high heat. Add half the oil and the diced onion, fry for 5-8 mins, stirring occasionally, until soft, deeply golden and slightly charred at the edges. Remove from the heat, tip onto a plate and leave to cool.Step 2
Tip the beef mince into a bowl and once the onions are cool, add them to the mince with a good pinch of salt and pepper. Mix well, then divide into 4 even balls. Flatten to patties, set on a lined tray and chill for about 15 mins to firm up.Step 3
Meanwhile, tip the rainbow slaw into a bowl with the parsley, campfire mayo, mustard and white wine vinegar. Season lightly and mix well. Set aside.Step 4
Heat a clean large non-stick frying pan over a medium-high heat. Add the remaining oil and fry the burgers on one side for 1-2 mins until well browned. Flip then place a slice of cheese on each burger, cook for 1 min, then cover with a lid and remove from the heat. Leave until the cheese has fully melted.Step 5
Spread the base of each toasted bun with the house burger pickle. Top with a cheeseburger, followed by fiery pickles and a generous spoonful of rainbow slaw. Add the lids, secure with a skewer if you like, and serve straight away with chips or French fries.
