
Tom Kerridge's Summer Tomato and Sourdough Salad

We love Tom Kerridge’s Summer Tomato and Sourdough Salad. Inspired by Italian panzanella, this shows off beautifully ripe tomatoes at their finest. Garlic rubbed toasted sourdough is torn into bite-size pieces and mixed with juicy tomatoes, basil and a simple dressing for salad perfection.

Ingredients
- 2 M&S Collection Crafted Sourdough Bread Baguettes
- 5 tbsp unfiltered extra-virgin olive oil
- 1 garlic clove, peeled
- 2 red wine vinegar
- 1 tbsp balsamic vinegar
- 600g tomatoes, halved (we like Santini and Isle of Wight varieties)
- 1 small red onion, thinly sliced
- 1 handful basil leaves
Method
Step 1
Cook the baguettes to packet instructions. Set aside to cool then slice about 300g and tear into bite sized pieces.Step 2
Heat a large griddle pan over a high heat. Brush the sourdough slices with 1 tbsp oil, sprinkle with a little salt and add to the griddle pan. Cook until well charred on both sides. Remove to a tray and lightly rub each with the garlic.Step 3
In a large bowl, mix the remaining 4 tbsp oil with both vinegars and season.Step 4
When you are ready to serve; add the bread, both types of tomato, onion and most of the basil to the bowl then toss together. Season and divide between serving bowls then sprinkle with the remaining basil to serve.
