Luke Farrell – the man behind London’s Speedboat Bar – puts a Thai twist on a classic in this Tom Yum Bloody Mary. He says, “A bloody mary is a very personal thing. Ingredients
- 50ml vodka
- 250ml tomato juice
- 2 tbsp lime juice
- 2 tsp fish sauce, plus extra to taste
- 1 tbsp chilli jam, plus extra to taste
- 1 pinch white pepper
- 1 lemongrass stem, well bashed, for swizzling and to garnish
- 0.5 red chilli, to garnish
- 1 coriander sprig, to garnish
Method
Step 1
Put a handful of ice in a tall glass; pour over the vodka, tomato and lime juice.Step 2
Add the fish sauce and chilli jam (to taste) and white pepper.Step 3
Stir well with the lemongrass stem (leave in the glass); serve garnished with the chilli and coriander.
