Ingredients

  • 1 onion, finely chopped
  • 1 garlic clove, skinned and crushed
  • 3 celery sticks, trimmed and sliced
  • 1.2 l of vegetable stock
  • 2 tsp of fresh thyme, chopped plus some to garnish
  • 1 tbsp of olive oil
  • 800 g of chopped tomatoes
  • 1 pinch of pepper
  • 50 g of kellogg's all bran

Method

  • Step 1

    Heat the oil and cook the onion, garlic and celery over a low heat for 5 minutes.
  • Step 2

    Stir in the tomatoes, All-Bran, thyme and stock.
  • Step 3

    Bring to the boil and simmer for 20-25 minutes until cooked.
  • Step 4

    Then puree the soup in a blender or food processor, season to taste and serve garnish with fresh thyme or parsley.
