Tomato Salad with Green Chilli Piso and Manchego

Piso is the Portuguese version of salsa verde and makes a lovely dressing in this Tomato Salad with Green Chilli Piso and Manchego from Josh Dallaway – the chef behind London restaurant residency Tasca. “Tabasco isn't traditional in piso, but a few dashes liven things up, while the cheese adds a moreish salty kick.”

Ingredients

  • 30g coriander
  • 10 dashes mild green hot pepper sauce
  • 1 lime, juiced and zested
  • 40ml olive oil
  • 1 pinch salt
  • 200g cherry tomatoes, quartered
  • 50g (approx.) manchego, for shaving

Method

  • Step 1

    For the piso, blitz the coriander (reserve a few sprigs to garnish), hot pepper sauce, lime juice and zest, olive oil and salt in a high-speed blender, until almost smooth.
  • Step 2

    Put the tomatoes into a mixing bowl, then pour over the piso and toss to coat. Leave to sit for 5-10 mins.
  • Step 3

    Transfer to a serving dish, top with shavings of manchego and the reserved coriander sprigs.
