Simple, speedy and full of sunshine flavours, this Tomato, Tuna and Chickpea Salad makes a satisfying lunchtime or dinner treat, using only five ingredients. Tangy tomato juices mingle with the tinned tuna’s escabeche sauce to make a vibrant dressing.

Ingredients

  • 500g cherry vine tomatoes, halved, juices reserved
  • 2 (112g) tins Brindisa Ortiz Albacore Tuna Fillets in Escabeche Dressing
  • 1 large handful flat-leaf parsley, chopped
  • 1 (570g) jar chickpeas, drained
  • 2 slices sourdough, toasted, torn into bite-sized pieces or cut into cubes

Method

  • Step 1

    Put the halved tomatoes with their juices into a bowl. Season with a good pinch of salt and leave to stand for 5 mins.
  • Step 2

    Strain in the tuna dressing from the tins, then add the chopped parsley and the drained chickpeas.
  • Step 3

    Scatter over the toasted sourdough pieces and toss well to coat in the juices. Flake through the tuna, season with black pepper, and serve.
