Ingredients
- 500g cherry vine tomatoes, halved, juices reserved
- 2 (112g) tins Brindisa Ortiz Albacore Tuna Fillets in Escabeche Dressing
- 1 large handful flat-leaf parsley, chopped
- 1 (570g) jar chickpeas, drained
- 2 slices sourdough, toasted, torn into bite-sized pieces or cut into cubes
Method
Step 1
Put the halved tomatoes with their juices into a bowl. Season with a good pinch of salt and leave to stand for 5 mins.Step 2
Strain in the tuna dressing from the tins, then add the chopped parsley and the drained chickpeas.Step 3
Scatter over the toasted sourdough pieces and toss well to coat in the juices. Flake through the tuna, season with black pepper, and serve.
