
Tonkotsu Ramen with Miso Pork

A popular Japanese ramen topped with a flavour packed miso pork and soft boiled egg. Recreate a restaurant classic at home with just a few key ingredients.Time and servings

Ingredients
- 1 tbsp of soy sauce
- 1 tbsp of cooking sake
- 1 tbsp of mirin
- 2 tsp of sugar
- 1 tbsp of vegetable oil
- 1 tsp of sesame oil
- 1 clove of garlic, thinly sliced
- 1 knob of ginger, finely chopped
- 1 brown onion, sliced
- 200 g of pork loin, thinly sliced
- 2 large eggs, boiled and cut into halves
- 1 sheet of sushi nori, cut into rectangular sheets approximately 5cm x 9cm
- 2 spring onions, thinly sliced
- 1 pack of itsuki ramen
- 2 tbsp of miso paste
Method
Step 1
Into a bowl, combine the miso, 3 tbsp of water, soy sauce, sake, mirin and sugar. Mix well and set aside.Step 2
Into a pan on a high heat, add the vegetable oil, sesame oil, garlic, ginger and onions. Fry until onions are lightly brown on the edges. Add the pork and fry until cooked through.Step 3
Lower the heat to a low/medium heat. Add the miso sauce. Stir to combine. Cook for a further 2 minutes. Set aside.Step 4
Cook the ramen noodles and prepare ramen soup as per instructions on packaging. Place into a bowl.Step 5
Place the pork on one side of the noodles. Place the egg halves on the other side of the noodles.Step 6
Finally place the cut nori onto one side of the bowl and garnish with spring onions.
