Traditional honey mustard glazed ham with crème fraîche sauce.

Ingredients

  • 2 kg of gammon joint
  • 2 large of carrots
  • 1 small handful of cloves
  • 3 celery sticks
  • 5 bay leaves
  • 5 cloves of garlic
  • 1 bunch of fresh thyme
  • 16 black peppercorns
  • 1 lemon
  • 3 tbsp of grey poupon dijon mustard, (for the glaze, plus 2 tbsp for the mustard sauce)
  • 1 tsp of grey poupon wholegrain mustard, (for the glaze, plus 1 tsp for the mustard sauce)
  • 3 tbsp of runny honey, (for the glaze)
  • 2 tbsp of brown sugar, (for the glaze)
  • 2 tbsp of crème fraîche, (for the mustard sauce)
  • 1 pinch of salt
  • 1 pinch of pepper

Method

  • Step 1

    Place the gammon in a large pot.
  • Step 2

    Chop and throw in the carrots and celery, together with the bay leaves, garlic cloves, fresh thyme and black peppercorns.
  • Step 3

    Pour in around 1,5 l of water to cover the gammon. Cover with a lid and bring to boil. Lower the heat and simmer the gammon gently for 40 minutes.
  • Step 4

    Allow the meat to cool slightly in the broth for 30 minutes and then place it into a baking dish.
  • Step 5

    Preheat the oven to 180℃.
  • Step 6

    Use a small knife to remove the rind from the gammon but leave a nice layer of fat.
  • Step 7

    Score the fat in a diamond pattern and stud with cloves all over the pattern.
  • Step 8

    Mix the glaze ingredients and leave it on the side.
  • Step 9

    Place the meat in a roasting tray and bake for around 15 minutes until the top of the ham becomes slightly crispy.
  • Step 10

    Remove from the oven and pour the glaze all over the fat.
  • Step 11

    Bake for another 40 minutes and baste frequently as it bakes, until ham is golden and crispy.
  • Step 12

    Meanwhile, mix all the mustard sauce ingredients together and keep it in the fridge until ready to serve.
  • Step 13

    Remove from the oven, serve on a large platter and spoon over the warm juices with the mustard sauce on the side.
