This cocktail recipe from Kate Calder, author and food stylist of 3 Ingredient Cocktails Tropical Rum Punch, is a gorgeous rum-based tiki cocktail with added British summer favourites, mint and strawberries. It’s a fun mashup that’ll go down a treat at any barbecue gathering, and it’s super easy to scale up if you’re expecting a crowd. We’ve garnished ours with a lavish amount of fresh fruit – don’t hold back!

Ingredients

  • 1 handful mint, from 3 large sprigs, plus extra to garnish
  • 4 strawberries, sliced
  • 120ml dark rum
  • 120ml apricot brandy
  • 600ml pineapple juice
  • 4 dashes aromatic bitters

Method

  • Step 1

    Fill a jug or a small punch bowl with ice.
  • Step 2

    Add the mint leaves and sliced strawberries, then pour in the rum, brandy and pineapple juice. Add the Angostura Bitters and stir well.
  • Step 3

    Fill 4 tall glasses with ice and divide the punch between them. Decorate with an outlandish amount of fruit, if you like, and serve.
