Ingredients
- 300g frozen tropical fruit
- 1 tsp ancho chilli powder
- I lime, juiced and ½ zested, plus extra juice if needed
- 1 good pinch sea salt
- 1 good pinch caster sugar
- 75ml reduced-fat coconut milk, plus extra if needed
- 1 tbsp light agave nectar, plus extra if needed
Method
Step 1
Remove the frozen tropical fruit from the freezer; leave to soften at room temp for 5 mins while you make the Tajin-style mix.Step 2
Combine the ancho chilli powder with the lime zest and a good pinch each of sea salt and caster sugar; mix well.Step 3
In a blender or food processor, blitz the fruit with the coconut milk, lime juice and agave nectar until smooth; add more coconut milk, 1 tbsp at a time, if needed. Taste; add more lime juice or agave nectar, as liked.Step 4
Spoon or pipe into 2 small glasses and sprinkle with the Tajin-style mix.
