
Tuna and White Bean Salad

Throw together a quick and healthy lunch in just 5 minutes! This fibre-rich tuna salad can be easily assembled on your break or just before work. If you don't have white beans, swap in butter beans or cannellini for a similar result. Add a hard-boiled egg for extra protein.Time and servings

Ingredients
- 0.5 tin of tuna
- 200 g of white beans, drained and rinsed
- 1 tbsp of red onion, sliced (we used Cook With M&S Sliced Red Onion)
- 5 cherry tomatoes, halved
- 1 tsp of capers
- 1 drizzle of herb dressing(we used Tracklements Italian Herb Dressing)
Method
Step 1
Place half a tin of tuna in a bowl and flake with a fork.Step 2
Add the white beans, chopped onions, cherry tomatoes and capers.Step 3
Season and drizzle with herb dressing, stir and taste, adding more dressing if needed. Serve as it is or with salad leaves, toast, or your choice of grain pouch.
