Ingredients

  • 4 prime tuna steaks
  • 1 red onions
  • 2 tbsp of large bunch of basil
  • 6 garlic cloves
  • 1 tbsp of chives
  • 2 trimmed salad onions
  • 1 garlic
  • 1 butternut squash
  • 24 baby plum tomatoes
  • 3 longlife beetroot
  • 1 tbsp of balsamic vinegar
  • 1 large ripe mango each
  • 4 sweet potatoes
  • 2 tbsp of blended olive oil
  • 3 drops of lemon juice

Method

  • Step 1

    Pre heat oven to 200ºC, then peel and prepare the sweet potatoes, butternut squash and beetroot and transfer to roasting dish. Coat liberally with olive oil, a knob of butter, salt and pepper and place garlic cloves in and around the vegetables to impart flavour. Transfer to the oven for approx 20 mins.
  • Step 2

    Meanwhile prepare the salsa, by combining the tomatoes, mango, onions, garlic and fresh herbs in a bowl. Stir through the lemon juice, balsamic vinegar and olive oil and add seasoning.
  • Step 3

    Heat remaining olive oil in a frying pan on medium heat. Add tuna steaks and sear for approx two minutes each side (cook longer if desired). Serve immediately, dressing with liberal portions of salsa and steaming roasted vegetables on the side.
