
Turkey Burgers with Chilli Lime Mayo

Ingredients
- 1 round lettuce, broken into individual leaves, to serve
- 3 cm of fresh ginger root, peeled and grated
- 1 clove of garlic, crushed
- 1 tbsp of sweet chilli sauce, plus 1tbsp for the mayo
- 25 g of fresh coriander, finely chopped
- 25 g of fresh mint, leaves finely chopped, plus extra to garnish
- 5 spring onions, finely chopped (3 for the burgers and 2 to serve)
- 800 g of sweet potatoes, cut into thin wedges
- 4 tbsp of mayonnaise, for the mayo
- 1 lime, zest and juice, for the mayo
- 500 g of turkey thigh mince
- 2 tbsp of olive oil, plus 1tbsp for the wedges
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6 and place all the ingredients for the burgers (except the oil) into a large bowl.Step 2
Add some seasoning, mix together using your hands and divide the mixture into four. Shape into burgers and set aside.Step 3
Put the sweet potato wedges on a baking tray and toss with 1tbsp oil and seasoning, making sure each wedge is coated. Cook in the oven for 20 mins.Step 4
While the wedges are baking, add 2tbsp of oil to a large non-stick frying pan on a medium to low heat and cook the burgers for 5 mins on each side, until nice and golden. Remove from the pan and add them to the oven tray with the wedges to cook for 5 mins more.Step 5
Meanwhile, make the mayonnaise by mixing everything together with some seasoning.Step 6
When you’re ready to serve, place each burger onto a couple of lettuce leaves, scatter with the spring onions, add the wedges and finish with a dollop of chilli lime mayonnaise
