
Turkey Tom Yam Soup

Ingredients
- 300 g of cooked turkey
- 150 g of straight to wok noodles
- 2 carrots, peeled and cut into matchsticks
- 100 g of cabbage, shredded
- 2 tsp of tom yum paste
- 700 ml of chicken stock, fresh, or made from a stock cube
- 3 spring onions, finely sliced
- 75 g of mushrooms, finely sliced
- 200 ml of coconut milk
- 1 small handful of fresh coriander, to garnish
Method
Step 1
Place the stock in a large saucepan and bring to the boil.Step 2
Add the turkey, spring onions, cabbage, carrots and mushrooms to the pan and simmer for 5 minutes.Step 3
Add the noodles and tom yam paste, stir to mix and cook for a further 5 minutes.Step 4
Stir in the coconut milk, bring back to the boil.Step 5
Garnish with coriander and serve.
