
Ingredients
- 200g feta
- 2 tbsp runny honey
- 3 tbsp extra-virgin olive oil
- 1 tbsp dried oregano, plus 1 tsp
- 2 x 300g packs Isle of Wight heritage tomatoes, cut to bite-sized pieces
- 2 cucumbers, cut to bite-sized pieces
- 1 red onion, finely sliced
- 1 green pepper, sliced
- 100g pitted kalamata olives, halved
- 1 small bunch mint
- 2 tbsp red wine vinegar
Method
Step 1
Heat the oven to 200°C/ 180°C fan/ gas 6. Put the feta in a small baking dish, drizzle with 1 tbsp honey, 1 tbsp oil and sprinkle with 1 tbsp oregano then bake for 15-20 mins, until golden and softened.Step 2
Meanwhile, tip the tomatoes, cucumber, onion, pepper, olives and mint into a serving bowl and toss together.Step 3
Whisk the vinegar with the remaining 2 tbsp oil and 1 tsp oregano. Then pour over the salad and toss again to fully coat.Step 4
Top with the baked feta, any cooking juices and the remaining 1 tbsp honey to serve.
