This Ultimate Greek Salad from Isle of Wight Tomatoes is the perfect summer salad. Delicious on its own, with a wedge of crusty bread or as a side to a feasting platter. Don’t fancy turning the oven on? Don’t worry, simply serve with fresh feta to keep it more traditional.

Ingredients

  • 200g feta
  • 2 tbsp runny honey
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp dried oregano, plus 1 tsp
  • 2 x 300g packs Isle of Wight heritage tomatoes, cut to bite-sized pieces
  • 2 cucumbers, cut to bite-sized pieces
  • 1 red onion, finely sliced
  • 1 green pepper, sliced
  • 100g pitted kalamata olives, halved
  • 1 small bunch mint
  • 2 tbsp red wine vinegar

Method

  • Step 1

    Heat the oven to 200°C/ 180°C fan/ gas 6. Put the feta in a small baking dish, drizzle with 1 tbsp honey, 1 tbsp oil and sprinkle with 1 tbsp oregano then bake for 15-20 mins, until golden and softened.
  • Step 2

    Meanwhile, tip the tomatoes, cucumber, onion, pepper, olives and mint into a serving bowl and toss together.
  • Step 3

    Whisk the vinegar with the remaining 2 tbsp oil and 1 tsp oregano. Then pour over the salad and toss again to fully coat.
  • Step 4

    Top with the baked feta, any cooking juices and the remaining 1 tbsp honey to serve.
