
Upside-down Berry Buns

Ingredients
- 300 g of mixed berries
- 125 g of self-raising flour, sifted
- 200 g of mascarpone
- 125 g of butter (at room temperature)
- 125 g of caster sugar
- 2 large eggs, beaten
- 2 tsp of vanilla essence
- 2 tbsp of milk
- 2 heaped tsp icing sugar
Method
Step 1
Line a muffin tray with 12 muffin cases. Divide the berries between the cases, reserving 6 of each type for decoration.Step 2
Cream the butter and sugar until light and smooth. Add the eggs a little at a time, beating well, then add 1 tsp vanilla essence. Fold in the flour, then the milk. Stir until smooth.Step 3
Divide the mixture between the cases and bake for 15-20 minutes until golden and springy to touch. Remove from the tin and cool on a wire rack. Once cool, remove from the cases and flip berry side up.Step 4
Beat the mascarpone with the icing sugar and remaining vanilla. Top each bun with the mascarpone mixture and a berry. Voila!
