
Valentine’s Cupcakes

Ingredients
- 40 g of plain flour
- 1 tbsp of cocoa powder
- 25 g of unsalted butter, at room temperature
- 150 g of icing sugar, sifted
- 75 g of cream cheese
- 2 eggs
- 75 g of butter
- 100 g of caster sugar
- 50 g of dark chocolate
- 0.5 tsp of baking powder
- 2 drops of red food colouring
Method
Step 1
Preheat oven to 190˚C/Gas 5Step 2
Set a bowl over a pan of gently simmering water. Add the butter and chocolate to melt, then stir in the sugar. Remove the bowl from the pan, cool for 5 mins, then add the eggs one at a time as you whisk thoroughly.Step 3
Sift the flour, cocoa and baking powder together and fold into the mix. Divide between 8 cases and bake for 20-25 mins until risen and springy to touch. Cool on a wire rack.Step 4
To decorate, beat together the butter and half the icing sugar. Stir in the cream cheese and the remaining sugar, then beat well as you add the colouring. Pipe on to the cakes and finish with sprinkles.
