
Valentine’s Lemon Biscuits

Ingredients
- 200 g of plain flour
- 1 pinch of of sprinkles per biscuit, to decorate
- 1 egg yolk
- 1 lemon, zested
- 125 g of butter, at room temperature
- 75 g of caster sugar
Method
Step 1
Preheat the overn to 190˚C/Gas 5Step 2
Cream the butter and sugar with a wooden spoon until smooth, then beat in the egg yolk and lemon zest. Sift in the flour and mix to a dough. Wrap in cling film and refrigerate for 30 mins.Step 3
On a lightly floured surface, roll the dough to about the thickness of a pound coin, and stamp out shapes with a cutter. Re-roll and cut any leftover scraps. Place the cookies on a large baking tray and bake for 10-12 mins until golden. Cool on a wire rack before decorating.
