Ingredients
- 200g cream cheese
- 50g icing sugar
- 1 tsp vanilla paste
- 2 meringue nests
- 2 heaped tsp blackcurrant jam, lightly beaten with a spoon
- 1 small handful basil leaves
Method
Step 1
Combine the cream cheese, icing sugar and vanilla paste in a bowl. Mix with a silicone spatula for 2 mins. If making ahead, chill until needed.Step 2
To serve, place a meringue nest on each plate; add a spoonful of the cream cheese mixture to the middle of each. Top with a dollop of jam and a few basil leaves.
