A simple classic for a reason, this Vanilla Fairy Cake Traybake is the perfect recipe for weekend baking for the whole family. Once you’ve mastered this try adding a fruity twist with lemon zest in the sponge and juice instead of water in the icing.

Ingredients

  • 250g butter, softened
  • 250g caster
  • 2 tsp vanilla extract
  • 4 medium eggs
  • 250g self-raising flour
  • 1 tsp baking powder
  • 3 tbsp milk
  • 300g icing sugar
  • 3 tbsp water

Method

  • Step 1

    Heat the oven to 180C/ 160C fan/ gas 4. Tip 250g butter into a large bowl with the caster sugar and beat until light and fluffy, about 5 mins.
  • Step 2

    Add the vanilla extract, eggs, flour, baking powder, milk and a pinch of salt then gently beat for 2-3 mins until combined and smooth.
  • Step 3

    Spoon the mixture into a baking tin, roughly 29x25cm, lined with greaseproof paper. Bake for 35-40 mins until risen and a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool completely.
  • Step 4

    Sift the icing sugar into a large bowl, whisk in 1 ½ tbsp water then add a splash at a time until you reach the desired consistency.
  • Step 5

    Pour over the cooled cake then top with sprinkles and slice to serve.
