A simple classic for a reason, this Vanilla Fairy Cake Traybake is the perfect recipe for weekend baking for the whole family. Once you’ve mastered this try adding a fruity twist with lemon zest in the sponge and juice instead of water in the icing. Time and servings

Ingredients
- 250g butter, softened
- 250g caster
- 2 tsp vanilla extract
- 4 medium eggs
- 250g self-raising flour
- 1 tsp baking powder
- 3 tbsp milk
- 300g icing sugar
- 3 tbsp water
Method
Step 1
Heat the oven to 180C/ 160C fan/ gas 4. Tip 250g butter into a large bowl with the caster sugar and beat until light and fluffy, about 5 mins.Step 2
Add the vanilla extract, eggs, flour, baking powder, milk and a pinch of salt then gently beat for 2-3 mins until combined and smooth.Step 3
Spoon the mixture into a baking tin, roughly 29x25cm, lined with greaseproof paper. Bake for 35-40 mins until risen and a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool completely.Step 4
Sift the icing sugar into a large bowl, whisk in 1 ½ tbsp water then add a splash at a time until you reach the desired consistency.Step 5
Pour over the cooled cake then top with sprinkles and slice to serve.
