
Vegan and Gluten Free Banana-Nut Muffins

Unlike the banana muffins I grew up loving, these muffins are delicious and health-enhancing. They’re totally vegan, sugar and gluten free and packed full of nutritious energy. The banana caramelises, giving the muffins a strong natural sweetness. I love to add the walnuts for an essential crunch in what is a perfectly light treat. Ingredients
- 60 ml of oil
- 240 g of brown rice flour
- 40 g of walnuts, chopped
- 2 tablespoons of ground flaxseed
- 6 tablespoons of water
- 3 bananas
- 3 tablespoons of maple syrup
- 2 tsp of baking powder
- 1 tsp of bicarbonate of soda
- 0.5 tsp of xantham gum
- 250 ml of dairy free milk
Method
Step 1
Preheat the oven to 180 degrees Celsius.Step 2
Start by mixing 2 tbsp of flaxseed with 6 tbsp water in a small bowl, and let it sit for 15 minutes.Step 3
Meanwhile combine all other ingredients in a large bowl and mix until smooth. Add the flax mixture and combine well.Step 4
Line a muffin tray with 6-8 muffin cases. Pour in the mixture and place in the oven to bake for around 20-30 minutes, until you can insert a sharp knife into the muffin, and it comes our clean!
