This creamy Vegan Caesar dressing will be your go-to this salad season. Delicious tossed through crunchy greens, spread in a sandwich or as a dip for crudité. Double up the recipe and keep covered in the fridge for up to a week.

Ingredients
- 3 tbsp vegan mayo
- 1 tsp Dijon mustard
- 2 tsp caper brine
- 2 tsp lemon juice
- 1 tbsp garlic oil
- 3 tbsp grated vegan hard cheese, we used I’M NUT OK, Oh Grate!
- 1 head romaine lettuce, roughly chopped
- 1 head chicory, roughly chopped
- 1 tbsp drained capers
- 1 tsp chopped chives
- 1 tbsp chopped parsley
- 40g toasted walnuts
- 60g croutons
Method
Step 1
Mix the mayo, mustard, caper brine, lemon juice, garlic oil and vegan cheese with a pinch of seasoning in a bowl. Taste and adjust to your liking.Step 2
Tip the romaine lettuce, chicory and capers with most of the herbs, walnuts and croutons into a large bowl. Pour over the dressing and toss together to fully coat, transfer to a serving bowl.Step 3
Sprinkle over the remaining herbs, walnuts and croutons to serve.
