This creamy Vegan Caesar dressing will be your go-to this salad season. Delicious tossed through crunchy greens, spread in a sandwich or as a dip for crudité. Double up the recipe and keep covered in the fridge for up to a week.

Ingredients

  • 3 tbsp vegan mayo
  • 1 tsp Dijon mustard
  • 2 tsp caper brine
  • 2 tsp lemon juice
  • 1 tbsp garlic oil
  • 3 tbsp grated vegan hard cheese, we used I’M NUT OK, Oh Grate!
  • 1 head romaine lettuce, roughly chopped
  • 1 head chicory, roughly chopped
  • 1 tbsp drained capers
  • 1 tsp chopped chives
  • 1 tbsp chopped parsley
  • 40g toasted walnuts
  • 60g croutons

Method

  • Step 1

    Mix the mayo, mustard, caper brine, lemon juice, garlic oil and vegan cheese with a pinch of seasoning in a bowl. Taste and adjust to your liking.
  • Step 2

    Tip the romaine lettuce, chicory and capers with most of the herbs, walnuts and croutons into a large bowl. Pour over the dressing and toss together to fully coat, transfer to a serving bowl.
  • Step 3

    Sprinkle over the remaining herbs, walnuts and croutons to serve.
