With layers of vanilla-infused silky tofu filling and coffee- and rum-soaked biscuits, topped with a dusting of cocoa, it delivers on every level. Ingredients

  • 150ml freshly made espresso
  • 2 tbsp dark brown sugar
  • 2 tbsp dark rum (or marsala wine) (optional)
  • 500g silken tofu, at room temperature
  • 6 tbsp caster sugar
  • 2 tsp vanilla extract
  • 80g unsalted vegan butter, melted
  • 12 rich tea biscuits (adjust the quantity, if needed, to suit your dish size)
  • 1 tbsp cocoa powder, for dusting

Method

  • Step 1

    Mix the espresso, brown sugar and rum or wine (if using) in a bowl. Leave to cool.
  • Step 2

    Put the tofu, caster sugar and vanilla in a large jug or bowl. Whizz with a stick blender until smooth. Keep mixing while slowly adding the melted butter.
  • Step 3

    Line up 6 small glass tumblers or dishes. Add a spoonful of the tofu filling to the bottom of each. Dunk 6 biscuits in the coffee mixture until soaked but not soggy; add 1 to each glass (break it up if needed) and top with another layer of filling. Repeat with the remaining ingredients, finishing with the filling. Smooth the top, then chill for at least 3 hrs or overnight.

    Dust with cocoa powder before serving.
